Hemp Use Food Production:
There are several ways to put hemp into your bars, granolas, breads, cookies, smoothies.
Note: Hemp does not contain any gluten. That’s why in baking, the maximal percentage of hemp is around 20%. This does not apply to e.g. granola bars and fillings etc. From an amount of 8% onwards, it’s possible to declare a product as being a hemp product. E.g. hemp bread. If the percentage of hemp is smaller, then the product is declared to be a “product with hemp”
Hulled Hemp Seed: Can be added straight to flour in most recipes, see what a difference it makes. Helled hemp seed can be added without further preparation to the dough. Apart from bread of bread rolls, it’s possible to bake croissants, strudel, rolls, stolen, biscuits and lots more with hemp grain. The recommended percentage is 10-15%.
Hemp meal: Is what you call the seeds when finely ground in a coffee or poppy seed grinder. This grinds the outer husks so fine you hardly notice they are there, just a little crunch, leaving the succulent inner nut to melt into the product, giving a lovely creamy texture. When you use hemp meal with white flour, you will not believe that was what you started out with it changes the colour and texture so much. Try putting some cumin or coriander seeds in the grinder with the hemp seed as well for interesting combinations. And, even add it to your dog’s food to increase their fat & fiber intake daily.
Hemp flour: Is the by-product after pressing the oil. Hemp seed is approximately 30% oil and 70% residue. The hard pellets or ‘cake ‘ are then finely ground to make the flour. Added to any flour by about 15-20%, it gives a spongy nutty texture and flavours with a green hew.
Hemp oil: Adds richness and gives the bread a lovely soft texture. In baked goods, use hemp oil in replace of vegetable oil. Using hemp oil in preparing dough is advisable in making nutty products. In order to enhance the hemp character of a product, they should be sprinkled with hemp seed before baking. During the course of being baked, various, delicious flavours are developed in the crust and bakery products present themselves in a very appealing way.
